Hi, there! My name is Lee and I started this blog as a place to build a community and foundation for people who need a little food inspiration. Since 2020 I had to make major food changes in my diet in order to improve a lot of my health issues. Along with those changes, came new challenges:
Where would I eat now?
What would I make?
Would I just starve? (Haha a little (VERY) dramatic)
Where and how would I find dishes that would be Gluten/Dairy/Sugar free??
And that is when I realized it would be a lot of trial and error before I could get anywhere.

Most references I found did not cover all the restrictions. I started to get discouraged that I wouldn't be able to recreate or come up with fun/tasty ways to eat anymore. But what if I stopped trying to recreate things line-for-line, and just started focusing on the foods I could eat and how to make them stand out? This lead to a expedition of figuring out which products were the best at recreating dishes that tasted close to "normal" or how I remembered them.
However, after some time, I started understanding that even though I may not be able to create exact replicas of meals, it did not mean that they couldn't start to form their own unique flavors and textures. The core of the meals stayed the same, but I let them grow in their own light instead of trying to force food to be something it wasn't.
That is where my food journey started to turn into a positive and hopeful one.
I know cooking with restrictions can seem overwhelming, and even impossible, but sometimes the best dishes exist without much needing replaced. Eating "Everything-Free" begins with knowing what’s in your food and most importantly the potential that food has. Although eating out is such a nice convenience, it is not a luxury that all of us get to have. My goal is to never make a night-in-meal a boring one! Hopefully some of the things I share on here will be insightful to you and make food seem a little less scary to make.
